An emblematic figure of the rebirth of Colombian gastronomy, Leonor Espinosa moved and reinvented his restaurant last year, which has since joined 46th place in the World’s 50 Best Restaurants 2021 ranking. In this new location, Leonor Espinosa has developed a tasting menu with 100% Colombian ingredients and each dish is part of a larger story about Colombian food. In 2008, Leonor Espinosa he founded the non-profit association Funleo with his daughter, Laura Hernández-Espinosa, Leo’s chief sommelier. The mother-daughter team helped reveal the native ingredients and age-old techniques that inspire Leo’s unique menus. Today, Funleo continues to identify, claim and promote the culinary traditions of rural and ethnic communities, promoting their well-being and health, through programs that encourage the use of indigenous ingredients across the country and enable them to access food security. The origin of each ingredient is highlighted in Leo’s menu, such as the pulantana of the desert or the cacay and the cnopio of the Andean feet.
In addition to guiding Leo and Funleo, Leonor Espinosa contributed to the creation of a gastronomic center in the Gulf of Tribugá to provide another environment for those affected or involved in drug trafficking. She also campaigned to promote Colombia’s culinary richness by encouraging communities to use their cultural heritage as a tool for socio-economic development.
