1. The very “crunchy” cutlet.

Impossible to ignore it during the summer. Due to its price, it is a piece that is only used on special occasions. Depending on your budget and tastes, several options are available: Aubrac meat, Galician beef or cured meat.

Have you made a choice? OK let’s go. First of all, it is essential to remove the steak from the cold at least two hours before cooking. In fact, in the event of a thermal shock, the meat will tend to contract. To cook, heat the grill of your barbecue by lowering it as close to the embers as possible. At the same time, massage the meat with the fat. The butcher piece should only be placed when the grill or cutting board is hot.

Why so much preparation? In this way, you would be able to provoke a “Mailard reaction”. This involves creating a crust on both sides of the meat. This will make it crunchy on the outside and tender on the inside. Cook about four minutes per side, without ever piercing the meat.

For rare meat, it will take 7 minutes per side for one pound piece and 10 minutes if you want to eat your prime rib. At the end, some like to let the meat rest for another 5-6 minutes in aluminum foil so that the juice is distributed over the entire surface. Then add coarse salt and enjoy your meal.

2. Grilled marinated summer vegetables

At this time of the year, many vegetables are already available on the market stalls. If their flavor is already very real when grilled with a drizzle of olive oil, they can be seasoned. In fact, it is possible to accompany everything with a marinade. For this, crush some garlic and mix it with an equal amount of olive oil and lemon juice. All with chopped basil.

Then pour some of the marinade over the courgettes, peppers and aubergines cut into strips. It is best to let the entire preparation rest for an hour in the refrigerator. To cook, wait until your barbecue is hot. Grill them for two minutes on each side. Use the marinade regularly to grease the vegetables.

3. Summer fruit skewers

Of course, the fruits are already a delight. But nothing prevents you from changing your habits. Like vegetables, it is possible to transform them with a marinade. It will then enhance the taste and, above all, make them more fragrant after grilling.

Provide honey, a rum base, brown sugar, melted butter and, for those who wish, a pinch of cardamom. For this marinade, choose pineapple, banana, peach, apricot, or even strawberries. Put them on a skewer before sprinkling them with the previously prepared marinade. To grill, it only takes a few seconds per side. Accompany everything with a scoop of ice cream and this dessert will be perfect.
